Famous West Virginia Fried Green Tomato Breakfast Biscuit

Serves 4

1 cup All Purpose Flour
½ cup Cornmeal
1 Tbs. Kosher Salt
¼ Tbs. Black Pepper
4 whole Green Tomatoes
(cored and sliced ¼ in. thick)
8 slices Bacon (baked for 15 min. at 350 degrees)
4 slices Swiss Cheese
1 Tbs. Olive or Canola Oil
Teays Valley Biscuits
¼ cup Farmer’s Daughter Ramp Jelly


Mix together cornmeal, flour, salt, and black pepper. Toss green tomatoes in flour mix. Make sure to knock off any excess flour. Place medium sized skillet on medium high heat. Pour oil into pan and let it warm in pan. Place green tomatoes into pan in batches and cook for three minutes on each side. Remove cooked tomatoes and place on a plate lined with paper towels. Prepare Teays Valley Biscuits from mix according to package directions. Spread ramp jelly on each biscuit. Place three slices of green tomato on each bottom bun. Add two slices of bacon and one slice of Swiss cheese on top of the tomatoes and serve.
